Hannon have tended maintained their sugar maples for a number of years.
Each February they tap their trees with both buckets and pipeline. This
is hard work which requires long hours and good, well maintained, equipment.
This effort provides crystal clear maple sap with just a touch of sweetness
to the tongue. The sap from an average maple tree contains
about 2.5% sugar content. This means that there is about 1 quart of syrup
in every 10 gallons of maple sap. The only way to extract that
syrup is to boil away the water. After spending their early spring days
gathering sap and maintaining the lines, the Hannon's spend their nights
boiling that sap in their sugar house. On average, roughly 39 gallons
of water are boiled away to gain each gallon of pure maple syrup. [

maple syrup is Dark Amber and Connecticut pure!
